All snacks

I got really busy this morning, too busy to stop for a formal lunch (you know, because I usually break out the white linens), so I’ve had to snack my way through the day to stay alive.  I kind of enjoyed it, I might take this approach more often.  It really lends itself to someone who likes to be eating at all times.

I started with this cantaloupe that I cut up this morning before breakfast:

This is that massive cantaloupe that my dad gave me.  I haven’t even started to make a dent, but I’m getting there.  Trying to pace myself.

Then I had this Kashi bar:

I thought I liked these, but I think I’ve changed my mind.  This is the Chocolate Peanut flavor, and it had that weird metallic artifical taste I don’t like.

Then, a couple spoonfuls of peanut butter and an apple:

It was a lot of peanut butter.  I finished the jar.  However, I think a good portion of it must have gotten on the camera when I took this picture, because I just looked over and Jack was licking its screen quite furiously.  I am glad someone likes that camera.

Behind

Yikes, sorry!  Big day yesterday.  I was a little backed-up with work in the afternoon and then last night I got a new cell phone to replace the blackberry that Jack attempted to eat last week.  So I’ve been busy setting it up and trying to find a ring tone that doesn’t make me want to throw it across the room and playing no less than 45 games of Jawbreaker.

Anyway, food.  We’re here for food.  I meant to post this yesterday morning, but Monday night I had a Skinny Cow chocolate ice cream cone after the pizza:

Go ahead and times this by two because I had another one last night.  These things are pretty awesome.  Unfortunately, they only come four to a box, which is kind of sad.

Earlier yesterday afternoon, I finished up the cantaloupe:

And also had some chocolate:

Probably not the best snack, but whatever.  It’s what I wanted and I was in a hurry.

We had sandwiches for dinner because I was knee deep in instruction manuals and the only thing Chris really knows how to make is his “special red sauce.”  As in, jarred tomato sauce and pasta.  We don’t have any tomato sauce, which is quite limiting when it comes to this recipe.

I have a melon problem

Yikes.  I have eaten so much cantaloupe today.  Here is just a small portion of it:

I can’t help it.  It’s so good and cold and fresh.  I need to not buy melons and pineapples and other large fruits because Chris never eats them and then I eat them all.  In one day, usually.  Not that that’s a bad thing, but it’s probably not necessarily a good thing either.

Oh well.  Another day, it might be cookies, so I should count my blessings.

I also had some pretzels:

And this morning, surprise, a Z Bar:

I ate this because I was still hungry after breakfast.  I think this is because I waited too long after my work out to eat.  My spinning class ended at 7:30 and by the time I walked Jack, showered, and did a bunch of stuff for work, it was almost ten and I was starving.

Yes.  I ate the whole thing.  I didn’t know a person could eat this much cantaloupe, but clearly I haven’t been giving myself enough credit.  And for the record, this picture is only about half.

This was good.

So you marinate about eight ounces of shrimp like so.  I used my food processor to make the marinade because I’m fancy like that and also I like making more dishes for Chris to wash.

Then, in a large bowl, mix together:

2 cans of black beans, rinsed

1 can of corn, drained

1 bell pepper

3 scallions

1/2 of a red onion

1 medium tomato

cilantro

In a separate bowl, for the dressing:

1/3 cup vegetable stock (approximately)

juice and zest from one lime

1 T honey

2 cloves garlic

1 t cumin

1 t paprika

1 t chili powder

Hot sauce to taste

salt and pepper

Add the dressing to the black bean mixture and mix.  In a pan, cook shrimp with the marinade until pink and cooked through, then add shrimp and cooked marinade to black beans and toss together.  Makes about four servings, give or take a little.

I also had this glass of wine with it:

But I only drank about half because Mexican food + wine = heartburn.  If you’re me.  I’m kind of like a fat old guy.

Action-packed afternoon

Our new neighbors are moving a bunch of furniture in, which means Jack is doing a lot of this:

He’s held this position for nearly an hour; a quiet observer.  Every once in a while, though, he lets out a little “grrrrr,’ just to let them know who’s boss.  He’s quite the watch pup.

Anyway, it is also very hot here today (is it too early to start complaining about the heat?  Because seriously.  I might be dying, and it’s not even June) and so I am eating lots of cold things like smoothies and cantaloupe:

And plain yogurt with strawberry fruit spread:

And I will be having something for dinner that doesn’t involve me being anywhere near the stove.  I’m thinking ice cream salad.
