This is so easy – adjust the amounts of the garlic and lemon juice to your taste. I kind of made it up as I went along but this is roughly the recipe I use:
3/4 cup bulgur wheat
2 cups water
1/4 cup olive oil
Juice of three lemons
3 cloves garlic, minced
1/2 small white onion, minced
2 small tomatoes, chopped
1 large bunch parsley, finely chopped
salt, pepper and cumin to taste
Boil water over high heat. Add the bulgur, return to a boil, reduce to low and cover. Cook 15 – 20 minutes or until water is completely absorbed. In a bowl, whisk together olive oil, lemon juice and garlic. Add to the cooked bulgur while it’s still warm so it can absorb the flavors. Let cool.
Once cool bulgur mixture is cool, add parsley, onion and tomato. Season with salt, pepper and cumin to taste. Makes about four servings.
