One of the best Seinfeld episodes ever.  On right now.  Why are you still reading this?

Anyway, lots of snacks today.  I was hungry.

Pear this morning:

I am usually skeptical of Trader Joe’s pears, but these are actually good.

Not frozen.  Let me ask you a question – red or green?  Chris says red.  I think I prefer green.  Are red really sweeter, or is he just making things up again?

Z bar:

Fairly self-explanatory, I’d say.

And then for dinner, I made this random eggplant/pasta/mozzarella concoction:

I’d post the recipe, but that’s about it.  Cut up an eggplant into chunks, saute in a little olive oil, mix with some pasta sauce, 4 ounces or so of cooked penne, and about three ounces of fresh mozzarella.  Bake for 15 minutes.   Voila!

Here’s my plate:

And now I’m having a few chocolate chips:

I also had a random meringue and two chocolate covered raisins.  I was trying to decide what I wanted.  I like to test things out and see how I feel about them.

Good night!

Wine Thursday

Barring any extenuating circumstances (such as the flu), if it’s Thursday, we’re drinking.  Tonight we were also cleaning, and battled the apartment in a record-breaking 40 minutes, which means even more time for wine.

I was feeling ambitious and made crab cakes for dinner.  Actually, I used to make these all the time, but Trader Joe’s has some really gross canned crab meat, so we haven’t had them in a while.  I remembered to pick up the good stuff at the regular grocery store this weekend, though.  I usually add some corn to them, mostly because I’m too cheap to buy enough crab.  Plus I like the corn, it makes them kind of sweet.  Here they are cooking:

I’ll post the recipe under that section. I made roasted potatoes and broccoli with them this time:

I ate nearly all of that, but there are some potatoes left over and I cannot wait to eat them cold with ketchup tomorrow.  I might have them for breakfast.

Earlier today, I had a couple of snacks.

A pear:

A fig:

This is the mother of all figs.  Huge.

And these little pieces of broccoli were too small to go in the oven but too cute to throw away, so I dipped them in a little hummus:

Alright, gonna relax and drink my wine.  Have a good night!  Tomorrow I have a meeting from 11 – 2 so I probably won’t get to post until the afternoon.

Minimal effort

I needed a title for this post so I asked Chris because he’s good at that stuff and he said, “Jeez, that’s about the minimal effort you could put into a post, isn’t it? What’s that, four sentences?”

We can’t all be a super blogger.

Anyway. This afternoon I had a headache and I thought maybe I was hungry so I had a pear:

Turned out I just needed some Advil.

Then for dinner we had pesto tortellini with sun dried tomatoes, spinach, and mushrooms.

And Skinny Cow for dessert:

A few more figs were also consumed at random tonight. Three, I think. Possibly five.

Chris is at a meeting tonight, so I made one of my favorite things for dinner that he would hate: toad in a hole! My mom used to make this for me all the time when I was little, and I loved it.

It’s not what you might call photogenic. I actually didn’t make the hole in the bread, because I thought about it, and what’s the point? I mean, why waste the bread, especially when it’s my favorite part? So this is non-traditional. I’m a rule breaker, you could say.

I also had a salad:

This is Trader Joe’s Just the Leaves (the best thing that ever happened to my salad intake), tomatoes, mushrooms, cucumbers, walnuts, honey and balsamic vinegar.

And some chocolate chips:

I am eating these right now. Mmmmm…

Oh, and I was hungry after a walk with Jack this afternoon, so I had a pear:

Let me tell you, walking this dog is quite a workout. Usually I just take him on two walks and then I just go along with Chris on the third, but today I was manning the leash on all three. He does not know how to walk, so you have to drag him and yank him down the street. Either you’re pulling him to slow down, or you’re yanking him away from the random food object/piece of trash that he’s attempting to eat. Yesterday we had a lengthy fight over a gummy worm in the middle of the sidewalk during the morning rush.

That’s what I had for a snack this afternoon. Pure fiber.  No, it isn’t, but it might as well have been.  I had hummus (aka beans), broccoli, cucumber, and a pear:

I’m a little nervous, because for dinner we’re having stir fry with more broccoli, bok choy, tofu, and brown rice.  I’m not sure if my stomach can handle it!  I’m going to try to make up a new sauce recipe…if it turns out good, I’ll post it!

Thanks for the camera tips!  Now I just have to learn how to take a decent picture…
