You can use any flaky white fish – cod, mahi mahi, tilapia, and flounder would all work well.
2 pieces of fish, about five ounces each
1/4 cup bread crumbs
2T grated parmesan cheese
1 lemon (you’ll use zest and juice)
1 bunch parsley, finely chopped
2t butter
2 cloves garlic, finely chopped
salt and pepper
Wash the fish and pat dry. Salt and pepper both sides and put them on a baking sheet sprayed with cooking spray. Mix bread crumbs, cheese, garlic, about a teaspoon of lemon zest, and parsley in a bowl. Melt the butter and lightly brush about half of it on top of the fish. Pack the bread crumb mixture on top with a fork, then drizzle it with the remaining butter. Bake in a 350 degree oven for about 15 – 20 minutes. Serve with lemon wedges. Makes two servings.
