8oz tilapia or other white fish
1 bell pepper
1/2 small shallot
2 cloves garlic
2 tsp chili powder
1 tsp cayenne pepper (or to taste)
1 tsp cumin
1 tsp paprika
cilantro
4 taco shells
salt and pepper to taste
Toppings: shredded lettuce, chopped tomato, scallions, guacamole, salsa, cilantro, cheddar cheese.
Cube the fish. Add shallot, bell pepper and fish to a pan (sprayed with cooking spray). Cook until fish starts to turn opaque, then add garlic and spices. Add a couple of tablespoons of water to loosen up the spice mixture and make a paste, then turn off the heat and add cilantro. Distribute among taco shells and top. Makes two servings.
Here’s my guacamole recipe:
1 avocado
1 lime, juiced
1 clove garlic
1 T shallot or red onion
1/2 tsp kosher salt (or to taste)
cumin, pepper, chili powder and cayenne pepper to taste
Mash it all together and eat!
