Recipe:
1 pint cherry tomatoes
1/3 of a seedless cucumber
1/4 of a small onion
2 small cloves garlic
1 small red pepper
6 – 7 basil leaves
1/3 of a small apple
1/2 cup vegetable stock (or to the consistency you want)
Juice of half a lime
A couple shakes of salt, pepper, red pepper flakes and paprika
1 – 2 T balsamic vinegar
Stick it all in the food processor or blender and let it go! Easy. You can leave out a few pieces of diced cucumber, apple, and red pepper and add them at the end for texture, but I didn’t this time. Also, I think most gazpacho is made with bread, and it would be good that way, too, but all I had was plain old wheat bread so I left it out.

I don’t calculate the calories. I did in the beginning but it was mostly for other people, not for me, and it got to be a little time consuming. I usually use all healthy things so I don’t really worry about it. I would guess that this is incredibly low. Maybe 150 or so for the whole thing?
