I never measure amounts with this, so the recipe is a little vague – sorry! You literally cannot mess it up though.
1 package soy chicken strips, like Lightlife or Trader Joe’s brand
2 stalks celery
1 apple (or a handful of grapes)
2T red onion
2T Canola mayonnaise or low fat plain yogurt
A handful of cilantro
Curry powder, cumin, and garlic powder
Brown chicken strips in a hot non-stick pan until a little crispy. Cut strips, apple, onion and celery into bite-sized pieces and mix in a bowl. Add mayonnaise (or yogurt) until coated – it’ll be about two tablespoons, but I just add a little at a time until everything starts to stick together. Chop cilantro and add, then shake in curry powder, cumin and garlic powder to taste. I usually add a TON of curry (maybe almost a tablespoon), a couple shakes of cumin, and a couple shakes of garlic powder. Makes about three servings.
The nutritionals for this really vary depending on how much mayonnaise you use, what brand of chicken strips, etc. My best estimate is 150 – 200 calories a serving.


Yum! I made this yesterday and it turned out pretty good. I really like that it has apples in it.
So somehow a week back I was searching for a recipe on google and came accross your website. I made this fake chicken salad last week and loved it. So good! when I was growing up my mom would make it with apples and I have always missed it since I stopped eating meat. very happy to have it back in my diet again, and I added pecans as my mom used to and it makes it even better. so I wanted to say thank you!
Yay! I have to try the pecans…or i bet it would be good with walnuts, too. Good idea.
