Tonight I very excitedly used a recipe in my new Food Network magazine to make Thai Red Curry Mahi Mahi Salad.
Quite a name, right? It was quite a recipe. I think it actually would have turned out well, except I’m scared of my broiler and so I couldn’t follow the directions. I have a broiler, but it’s one of those ones at the very bottom of a very small, very old oven, and every time I open it I freak out a little.
So, I just stuck the fish in the oven, which didn’t get it all brown and crispy like the ones in the picture. I actually didn’t really like the fish at all, probably for this reason. I gave almost my whole piece to Chris in exchange for his cucumbers and red peppers. The salad dressing, by the way, is pretty awesome.
In other news, I found out the other day that I am probably lactose intolerant, which is mildly depressing. I am not supposed to eat any dairy for two weeks, just to test the situation, I guess. I’m actually fine with the whole milk and cheese thing, although it cuts back on my cottage cheese progress significantly. I’m more so concerned about things like Sun Chips and ice cream and milk chocolate and and yogurt and ice cream and cookies and ice cream and cake and, seriously, what the hell am I supposed to have for a snack? Today I had an apple and peanut butter, but yesterday I popped a bag of popcorn, realized buttered popcorn = dairy, and had to throw it away.
And, by the way, this means that I won’t be getting my abs of steel via Jay Robb whey protein any time soon. Because obviously, that’s the only thing standing in my way.



When it comes to things like Yogurts, etc the lower the sugar (unsweetened yogurts) means the less Lactose (milk sugar) there is in that product. Also, the digestive enzymes in yogurts help the body to produce the Lactase to digest the Lactose. Got it?
ALSO, LACTAID EXTRA STRENGTH VANILLA CHEWABLES = DELISH + ICE CREAM LIFESAVERS <3 Own it, girl.
OH and by the way, Jay Robb’s Whey Protein makes FABU pudding! And all I do is add some thickener to the powder before adding my water and it thickens up JUST LIKE PUDDING <3 Then throw it in the freezer and GIRL — You got yoself some PROTEIN ICECREAM <3 Hollaa

maybe you could try soy ice cream? soy milk with the whey protein stuff (unless it already has dairy in it I guess). i hear you on the food allergy thing though. I am allergic to wheat and it is in everything. Because I don’t die when I eat wheat, just get bloated, i eat some of it just not things like whole wheat bread, etc. haha. The more refined the better for this tummy. Also being allergic to chicken kinda blows…
I hope you get it all figured out and you can either figure out alternatives or find out a solution to dealing with the lactose intolerance.
Ice cream makes me sick.
I almost cried a little bit writing that, because it’s a truly painful thing. I love ice cream, so I still eat it sometimes, but it takes about 10 seconds for nausea to hit. Yet, I can still eat frozen yogurt. It’s really an unsolved mystery.
Have you tried soy ice cream? It’s pretty awesome.

You should take a picture of your oven. If it’s one of those teeny tiny NYC ones, no one would believe it!
Sorry to hear about the lactose intolerance thing, that’s certainly no fun. However they do make some alleged fabulous soy ice creams (not that I’ve tried them) so maybe you could check those out? At least there’s still Z-bar hope
Don’t worry Richmond apartments have the same type of small oven with the broiler you are speaking of and I have yet to use mine as well. It’s kind of dirty looking and you have to light a match or lighter to light it by hand I think, which is plain scary because I once almost burnt my house down when I dropped an oven mitt in the oven once. Needless to say. I’m afraid of it. We should both do some sort of experiment in an effort to force one another to try using it.
I’ve got the same type of broiler. It’s not THAT scary…you just have to keep an eye on things in it.
Also, I’m lactose intolerant too but I just take a lactaid when I know I’m going to eat something that will bother me. I’m mostly OK with cheese, but ice cream, yogurt and milk all require lactaids.
Hmmm, I think you will be ok, are you just doing the no-dairy-at-all for a test to see?
both my mom and I are Lactose intolerant and butter is not dairy so that’s no problem what so ever (its pure fat…)
and I can eat yogurt because of the bacteria in it, its already almost ‘digested’ anyway.
plus soy milk is yummy (i think) 8th continent is the best.
but soy cheese and soy yogurt? gross.
rice and almond milk are also good, and rice “icecream” which is actually more like sorbet is ok.
trick? i got an icecream machine and make my own… i use coconut milk and yogurt and stuff and its pretty creamy and makes up for all the lack of Eddys…

Yeah, she said to do it as a test. You know, I thought butter was fine too, but the doctor told me not to eat any, so I don’t know.
I’m just curious, how did you find this out? Did you just notice that you were having stomach/digestive problems and that was one of the things you thought of? I have been having some suspicious stomachaches lately and this is one of the things I thought it might be, so I’m wondering if that is also how it was brought to your attention.
No ice cream?! WHAT.THE.HELL. I don’t know what I would do. Take Julz’ advice and get some of those lactaid pills stat!
Being lactose intolerant does NOT mean you have to get rid of all dairy from your diet. Trust me, I know, I’ve been dealing with this for about 5 years. Not all dairy has high levels of lactose. I can’t say that you will be able to eat ice cream, but butter, most all natural yogurts, and cheese is fine. I haven’t eaten ice cream for years and i have cut out most milk, cream, etc and I am absolutely fine. I also don’t get a belly ache after dinner anymore! But I eat a ton of cheese and use butter daily, so just do your research and don’t fret, you’ll get used to it!

I recently got diagnosed as being lactose intolerant (possibly due to the fact that I ate ice cream every day for a year…). Two words for you, my friend…. soy cream (is that two words??).

I’m telling you, take those lactaid pills…they totally cut down on the lactose tummy aches!! And you know I’d never steer you wrong on the stomach cures! I’ve tried ‘em all!

I am too lazy to read all the comments here, but did anyone suggest coconut-milk ice cream? It is fan-freakin-tastic. I’m vegan so I’ve tried just about every non-dairy everything out there. The coconut-milk ice cream is the best (and it oddly enough doesn’t taste like coconut). Oh, and as for yogurt – no, it doesn’t get any better. But you get used to life without it, I promise.

Even better than soy yogurt is “So Delicious” coconut milk yogurt. They have coconut milk ice cream too. Yeah!!!
I don’t eat any dairy either and this is amazing. (Ask Laurel… I made her try it.)
