The star of the show this weekend was my stuffy nose, followed closely by my sore throat and thus, ice cream.
On Friday, there was the Reese’s Klondike bar:

Not to be confused with a Mr. Softee, which is way, way better. Not that I’m complaining. Chris literally ran out of our apartment and down the street to catch the truck and get this for me. He is nice.
And Sunday, a Skinny Cow cone:
I ate regular food too, don’t worry. Here are the highlights:
On Saturday, we walked with Jack to Barnes & Noble, learned the hard way that hyper puppies and bookstores don’t mix, and then eased our stress by stopping in a park on the way home to eat bagels. I had a whole wheat everything with scallion cream cheese:
For dinner, we went to Mary Ann’s, my favorite Mexican place ever.

I usually get vegetable fajitas, but I wanted something cheesy. I think this fit the bill. Their shrimp burritos and enchiladas are really awesome. I also had a margarita, obviously.

If you can believe it, this was Chris’s first Starbucks purchase ever. I thought that called for italics, mostly because I’ve spent roughly $4,000 there, and I’m only 25.
I bought a pineapple at Trader Joe’s, and consumed most of it within an hour of returning home:
I know I also had a Z Bar on the way home from the grocery store, but I don’t think I took a picture. I’d venture to say that we know what they look like by now, am I right?
And then for dinner last night, I heroically pushed aside my illness and made eggplant roll-ups with goat cheese and mozzarella:
It’s basically just thinly sliced eggplant spread with goat cheese and some bread crumbs, rolled up, covered in marinara and mozzarella cheese, and baked in the oven for 25 minutes or so. For the first time ever, I salted the eggplant to see if it really gets the bitterness out, as they say it does. I also took the liberty of salting Chris:
I figured if it works on eggplant, it might also work on boys. Unfortunately, I didn’t notice a difference in either case.












I love fresh pineapple! I have a hard time keeping pineapple around for more than 10 minutes and sharing with others.
Wow. That does deserve italics. I know a lot of people who refuse to go to Starbucks but will still go in and buy something because it’s there and down the block…and down another block… And I’m with you on the spending a bazillion dollars there… it’s too easy to do.

I hope you feel better. I’m saddened by the fact that the salting of the eggplant didn’t take out the bitterness. Someone wrote about a pounding method on my blog, next time I will try that and see how it goes. BTW….Chris might want to be gone for the night if you decide to try the pounding method.

I’m not sure where the bitterness goes but this is what Hangry suggested when I was having eggplant troubles:
Eggplant: The same thing happened to me when I started cooking it, so I asked my mom who makes the best eggplant parm. I swear she is not crazy, but this is what she said:
Some people salt the eggplant, but she just peels, slices and puts it under a paper towel. Then she pounds it. When she picks the paper towel up a brown liquid is visible on it, which supposedly is the bitter juice. She also believes that the females, which have more seeds, are more bitter. You can tell a female from a male because (of course) the male is longer and thinner and the female is rounder.

Sorry to read you’re feeling ill…. feel better! I also can’t stop eating fruit, especially yummy pineapple. When someone in my family tries to grab a piece (any fruit) from my bowl I can get fierce, lol.
Interesting on the eggplant. I’ve never salted mine, but then never found it bitter either. Have you tried the long, light purple ones? Those tend to be sweeter I’ve found.
Here’s a tip for your eggplant/salt method:
You need to slice the eggplant first and put the slices on a flat surface. I usually use my countertop covered with paper towels. Salt each slice and let sit for about 15 minutes or so, you will see liquid – sop it up with a paper towel. Turn the slices over and repeat.
I like salt, so I just leave the remainder on the eggplant, but you can always wash it off as well.
