I used to make fish for dinner all the time, but for some reason we haven’t had it in ages. I picked up some mahi mahi the other day and we had it tonight with broccoli and roasted potatoes:
I loooove roasted potatoes. With ketchup, obviously. I wish I hadn’t eaten so many tonight because I really love them as leftovers for breakfast. Cold. Again, with ketchup.
I just cook the fish with a little olive oil, salt, and pepper in a cast iron pan, like so:
Chris ate three of the pieces, I had one. After, he briefly contemplated ordering a slice of pizza. Boys.

I love reading your blog so much because you always make me laugh. I was just curious what you actually did to make the roasted potatoes? And also for the brocolli do you buy a frozen bag and just take some out and microwave it? Thanks so much and have fun this weekend!
I do the exact same thing with roasted potatoes. They are great when hot off the pan but I love them cold the next morning. SO good.
That dinner looks delish. I need to cook fish more often.

I just wanted to let you know that tomorrow we’re going to the Sarris Chocolate FACTORY. Yep, a huge store full of chocolate goodness. I’ll eat loads of chocolate covered pretzels (and raisins, and peanuts, and just plain chocolate, and probably some ice cream too) in your honor.

I actually just put the broccoli in the oven too since it was already on. I think it was 400 degrees and I sprinkled it with some parmesan cheese, salt, pepper and garlic powder. It only takes 5 minutes or so. For the potatoes, I just cut them up really small, toss them in some olive oil (you just need a little), salt, pepper, and whatever else you want (sometimes I use herbs and stuff if I’m feeling fancy) and then put them on the bottom rack so they brown – toss them around a few times while they are cooking, and they take like 25 – 30 minutes or so depending on how big you cut them.
