But I, unfortunately, am not. I do feel sorry for you, though, so I’m going to throw in lunch today as a bonus. Not surprisingly, I usually eat the same thing for lunch (either a smoothie or a fake chicken salad sandwich) but today I used some of the leftover falafel to make a salad. It wasn’t that good. I’m not sure why, but I think it was because a) falafel might be gross cold, and b) I used too much sauce/dressing.
It’s basically lettuce, tomatoes, mushrooms, carrots, two falafel patties, sun dried tomatoes, and the tahini-yogurt sauce that I made the other night. I thinned it out with a little more milk to make it more dressing-y. Afterwards, I had a bunch of plain raisins.
Oh, and that reminds me – last night. The wine was flowing and it was a holiday, so I celebrated with like three handfuls of chocolate covered raisins. I know I said I don’t celebrate Easter, but if Target can close, I can eat some raisins. They are totally shaped like eggs, too.
