I’m a little behind, sorry. I don’t celebrate Easter but I had a bunch of stuff to get done today, most of which involved walking. My toes are sore. And would you believe this? Target was closed today. I mean, seriously. Totally ridiculous. We walked all the way to this fake “mall” that basically consists of Target, a DSW, and a Chuck-E-Cheese, and everything was closed. Even McDonald’s. It was like the twilight zone.
Anyway, back to last night. I made falafel with the Fantastic Foods mix because I don’t have a food processor so I can’t make it from scratch (although I’m open to ideas if anyone has overcome this obstacle). I’ve never used this mix before, and Chris had never had falafel before (I know!), but it turned out pretty well. I baked it, but it would be much better fried, I’m sure. Next time I might have to try a little olive oil action. Here’s the set up:
I made a random sauce with yogurt, tahini, cayanne pepper, some dry herbs, and milk, and it turned out okay. That stuff at the bottom is broccoli. We have tons of leftovers so I’m sure I’ll be having this for lunch next week. I already had it today.
After, I had a Skinny Cow:
And back to today – we planned to do our laundry, then got lazy (per usual) and decided to drop it off instead. We then went on several long, wondrous walks with our brand new puppy who doesn’t pull on the leash until your hand bleeds. And then we went on the Target excursion, which turned into a Bed Bath & Beyond excursion, and bought all new silverware and glasses for no good reason except that Chris hates our mini forks and I was sick of hearing him bitch.
After an afternoon of shopping, I was starving and had a bunch of raisins (some of them may have been chocolate-covered), an apple, a few pretzels, and peanut butter:
That looks like an entire jar of peanut butter, I know, but it was a new jar and a little runny. It’s really only like a tablespoon. Or two. Probably two.
And then we had dinner, which was good old go-to pasta:
I made WAY too much pasta because the Bed Bath & Beyond haul also included measuring cups and apparently we have been eating well under the serving size of pasta. My measuring instrument of old (i.e. my hand) clearly does not hold 3/4 of a cup.
And now I’m having a little wine, because it is, after all, a holiday.






Your falafels look really good. Mine turned out diasterous. Maybe i need a mix…

Hey, finding out you were eating LESS than you thought is always better than finding out you were eating more than you thought you were. That’s what happens to me. Usually it’s that I’m eating a LOT more.
I make my own falafel by simply mashing the chickpeas with a fork, I didn’t know people used a food processor, whoops.
I went to go buy TurboTax today so I could get my Dad’s help on my taxes while I’m home (super ugh) and first tried OfficeMax then Target then Walmart then Borders…NOTHING was open!!!! it was so frusturating, I was screaming in my car. I just don’t get that so much is closed on a religious holiday (even though I do celebrate Easter…ha), when there are so many other people who don’t celebrate Easter. Especially in NY!!!! I feel your pain today.
By the way…the Brooklyn Target…I hate it. It always seems to be out of everything. There is an amazing Target right off the 1 at 225th st (I know, far), that is entirely new and AWESOME!! True, it is really close to my job, but if you ever end up on the UWS, take a venture up to it. It’s awesome.
I tried to stop into Target to pick up some last minute Easter stuff and had the same problem!!! Believe it or not, I never had falafel either but I will have to give it a try hehe

Emma – That’s so funny, because I saw your post after this and was mad because mashing them with a fork was such a good idea. I don’t know why I didn’t think of that. I will next time, though – even though this mix is actually pretty good.
Robin – That’s true. Usually I’m eating a lot more, too. Especially if it involves ice cream.

Betsy – You took the words right out of my mouth – that Target is ALWAYS empty. They have like one towel, a plate, and maybe, maybe a set of sheets. It’s amazing, really. I’ve never seen shelves that empty. I usually don’t get all the way up to 225th, but if I’m ever there, I’ll try it. I actually try to avoid Target all together, but the Brooklyn one is within walking distance so we go sometimes.
Also, why don’t you try the Turbo Tax online? That’s what I always use and it’s super easy. And, if you meet certain income restrictions, you can file for free on IRS.gov – it’s called Free File and it’s just like a generic version of Turbo Tax.

Cara – Yep, amazing. The pasta is like sun-dried tomatoes, regular tomatoes, mushrooms, basil, shrimp, garlic and I think that’s all this time. Oh with a little veggie stock and a little white wine and then a tablespoon of olive oil after it’s all done. And parm.

I wanted to go to the gym yesterday so i drove to our little strip mall that my 24 hour fitness is in (along with target, starbs, marshall’s, jamba juice, etc) and the parking lot was competely deserted. Thankfully the gym was the only thing that was open. Its weird.
