Yeah, not exactly. I just got really busy with work and didn’t have a chance to post. But of course I had a chance to eat – I decided to follow Betsy’s advice and finish off my figs:
They will tempt me no more. I actually measured these because I didn’t want to get too crazy and it was about 1/2 cup. That’s two servings, according to the fig people who printed the package. I’m not sure if they mean to mash them all into the measuring cup until they are all bonded into one big sticky blob just so you can convince yourself that you’re only having two servings when you’re really having like three or maybe even four, but I think they probably do.
Anyway, for dinner I made Mexican lasagna. It wasn’t very photogenic:
I think I made this recipe up, but I can’t remember because it could quite possibly be the first thing I ever cooked. I have a knack for Mexican food; back when Chris and I first moved in together and I didn’t know how to cook, I alternated between burritos and spaghetti basically every night. Needless to say, I honed my skills.
Here’s my plate, I made a little guacamole to go with it:
I also had a few corn chips not pictured.

wow – u always come up w/ great ideas… mexican lasagna w/ guac – yummy
UM…YUM!!!! This looks not only photogenic (for someone who’s a foodie…cheesy mexican dish? What more could you ask for?!), but DELISH. I just ate dinner and am suddenly CRAVING mexican food. Can you post this recipe?!
[PS] I just started a blog…I’d love your feedback if you ever get the chance! I read yours every day and love it =)
ya that looks amazing! could you possibly post the recipe?
That mexican lasagna looks great! Thanks for linking to the recipe!
excellent call. i’m glad i could advise!
ok-seriously. what is in your mexican lasagna?? you’ve got to have some sort of recipe! it looks delish!
I need to add figs to my grocery list! Are they as sweet as dates?
hahahaa.. yeah.. I did the same thing when Devon and I first started dating – it was spaghetti, mac and cheese.. grilled cheese and soup.. they’re still my go-to foods when I get busy but I’ve also definitely branched out a bit.
And I think the Mexican lasagna looks so delish!
The recipe is linked under the favorite recipes tab. At least it should be, if I did it right. I think I did.
Lindz – I would eat anything with guacamole.
Julz – I will check it out today!
Emma, Karen – Thanks! It is pretty good and very easy.
Betsy – Now I just have to stop myself from buying more before this weekend.
Tina – I’ve actually never had a date, but I see you eat them all the time and want to try them. Figs are sweet. They have these little seedy things on the inside, which are my favorite part. Try em!
Aimee – I am actually not allowed to make burritos anymore.
This looked so good that I made it last night. It was delicious!
